This extraordinary pepper specialty comes from a nature reserve on the Malabar Coast, in Kerala, located in the extreme south-west of India. It is cultivated by unions of producer-farmers, far from any civilization. This environment is known for its great diversity of animals and plants, including tigers and elephants (hence its nickname). The harvested quantities of this pepper are very low and its unique aromas make it more interesting than most other Malabar peppers.

On the nose, we immediately detect its vegetal and floral aromas. On the palate its powerful develops slowly, we detect floral notes, jasmine and orchids, some sweet notes reminiscent of marshmallow and the freshness of acid green fruits such as green apple. Its fragrance lingers and evolves slowly to end with warm notes characteristic of piperine. It has a nice length in the mouth.

Usage tips

You will use it with red meats, fatty fish, mackerel, sardines, anchovies, tuna. For rice or pasta, with tomato sauces, pizza, vegetables, red cabbage, lentils, chickpeas.

Try it with fresh goat cheese or feta and a drizzle of olive oil. Dare it in the sweet register, with red fruits in salads or in your jams: strawberries, cherries, figs, apricots and with chocolate desserts.
