It is also called seeds of paradise, Guinea pepper, African pepper, malaguette or malaquette.
These berries are native to the West Coast of Africa, a region stretching from Guinea to the Congo, and called the Malaguette coast.
The parent plant of cardamom and turmeric, gives a fruit which is in fact a large capsule containing many pyramidal seeds.
These seeds have been used for a very long time and were very popular with us in the Middle Ages, before the massive arrival and popularization of pepper.
Its fragrance is very floral, rose water, iris and violet evoking oriental sweets such as rahat loukoum.
Its flavor is acidic, acrid and spicy, it is less pungent and less burning than pepper, with notes reminiscent of cardamom.
Usage tips
You will use it for your soups, your vegetable dishes, rice and with meats such as lamb, chicken or pork.
