Orange Chilli Aji Charapita

Capsicum annuum
Origin: Peru
Net volumes and weights: 50ml / 12g / 0.42oz

Intensity on the Scoville scale: 10 (so-called "explosive" pepper)

You have in front of you neither more nor less than the most expensive pepper in the world. It is a sought after pepper and still difficult to obtain because it is not cultivated but harvested by the natives during wild pickings found in the Amazon region of Peru straddling the Brazilian border; yet these small one cm peppers are very robust and resist insects and diseases well.
The Charapita was already coveted at the time of the Incas. Its price may vary from country to country and depending on its freshness; some estimates are around €23,000 per kilo. When dried, this little yellow pepper looks like a raisin, but don't let its small size fool you, this cute pepper is also one of the hottest. It is one of the so-called "explosive" peppers on the Scoville scale ranging from 100,000 to 150,000 US. If you are sensitive, avoid rubbing it.
On the other hand, if you are used to spiciness, you will appreciate its generous aromatic palette. Beneath its orange-yellow bodice, tropical notes with fruity nuances emerge with elegance evoking the zest of candied citrus fruits, apricot and quince jam, balanced by a few floral hints of lime blossom and daisy.

Usage tips

This hot and extremely rare pepper is to be used whole during cooking. It will spice up your stews and casseroles. Ideal for flavoring your sauces, marinades, chutneys, rougaille and stews. Handle with care, use gloves and avoid direct contact with mucous membranes such as the eyes.
