This famous pepper, called EZPELETAKO BIPERRA, in Basque is grown in the Basque country. It is the only French pepper to have obtained an AOP
Fame is rarely compatible with quality improvement and it is unfortunate that many are the mediocre peppers in this appellation.
The one we offer you is simply exceptional.
The producer has taken very careful care of the land, the plant, the fruit, has made selective sorting, which certainly gives less yield, to obtain peppers with even more aromas.
Its know-how and talent for successful drying, which must be long and precise, allow this spice to express all its aromas.
The color is shimmering and its aroma is incomparable, very fruity, sweet, extraordinarily fragrant with intense, deep, subtle, suave sweet notes. It is an ode to pepper flesh and dried tomatoes. The gourmet notes follow one another, toast, leaves and dry herbs, hay, quality tobacco leaves, cocoa and saffron.
On the palate, the Espelette pepper is subtly spicy, warm and not at all hot.
Usage tips
Use it as a classic seasoning, with fish and in particular oily fish, shellfish, squid and octopus. It is perfect with red or white meats, in your oils, sauces, marinades and dressings, but also pasta, fried rice, soups, eggs and omelettes.
In fact, you can put it in all sauces and even in chocolate desserts like the Aztecs did or citrus-based desserts.
In the simplified Scoville scale, which makes it possible to compare the spicy power of peppers, it is between "mild" and "medium", at degree 4, of this scale including 10, so there is no risk of burning your palace!
