The volcanic soil of the Bolaven Plateau in southern Laos, rich in minerals, combined with a rainy climate, at an altitude of 650m offers superior conditions to produce the highest quality pepper.

Our producer started with a handful of peppercorns and developed his plantation day after day with the utmost rigor. Instead of cutting precious woods in the rainforest, he chose to plant a variety of support trees that can grow with the pepper vines. The result is a pepper forest giving local birds a wonderful refuge.

The pepper we offer is the result of years of meticulous care, and a selection of the best certified organic peppercorns.

Our Boloven pepper is generous with a remarkable density, rich in essential oil. It is adorned with a cream-colored hue with well-defined streaks. On the nose, a soft, creamy fragrance with pastry notes of butter and brioche. The crunch is supple and the aromas appear gradually, without excessive spiciness leaving a certain freshness on the palate. The aromas remain milky, accompanied by pleasant touches of elderberry. A nice length in the mouth completes this subtle and elegant pepper.

Usage tips

Boloven white pepper goes well with shellfish, clams and oysters, with white-fleshed fish, with white meats, poultry, pork, veal, in white cream sauces, pasta, rice , steamed vegetables, button mushrooms, asparagus, green and white beans, tomatoes. It will be particularly highlighted on fried eggs. On the sweet side, it will enhance whipped cream, fromage blanc and white chocolate.
