This berry, improperly called "pepper", is the "pepper" of the aborigines of Australia, his native country.
This berry develops a real fragrance with notes of myrtle, aromatic plants, laurel, camphorated notes of geranium and green walnut.
The taste is sweet, the spiciness is not immediate, it develops in the mouth, accompanied by a bitter touch. It leaves a very fresh, fruity and spicy palate, clove, blueberry, blackcurrant and a touch of juniper.
Usage tips
You will use it with fish, bass, salmon, mackerel, sardines and herring; with meats such as lamb, pork, pigeon, duck, guinea fowl, pheasant and with white meats. It will go perfectly with fresh cheeses and particularly with goats and sheep. It is at ease with desserts based on red fruits.
