Despite its appearance, Cubeb pepper is a real pepper. It is given many names, tailed pepper or Cubeb, Embèbe pepper, Cubeche pepper, Kissi pepper or Java pepper, which creates confusion and it is frequently confused with other wild peppers.

Like its cousin black pepper, cubeb pepper was born in Kerala in southern India.

Indonesia is now the main producer. This culture is done mainly on the islands of Madura, Moluccas and Celebes. It is also grown in Sri Lanka.

This pepper is picked and processed in the same way as a black pepper.

Its fragrance is rich and complex, with a beautiful aromatic power, camphoric and tangy, with menthol and floral touches. The main notes are eucalyptus and turpentine, followed by notes of aromatic plants, rosemary, lavender and fresh notes of lemon.

Usage tips

Cubeb pepper is not very spicy, you will use it with meats such as duck, pigeon, guinea fowl, lamb and also with foie gras. It is perfect with fish such as sea bass, sea bream, cod, pollock, monkfish and it is perfect with shellfish. He is at ease with many vegetables and he particularly likes fruit, mango, quince, strawberries, cherries, apricots and all citrus fruits.
