Finding good quality "piper nigrum" peppers, black or white, in Madagascar is not easy. The specialty of the country is green pepper, so the majority of the harvest is early when the pepper is immature, which obliges our breeder to choose vines whose grains seem promising and to buy them on the vine to let them ripen and then repatriate to Antananarivo in a workshop for drying in the sun and the various sorting.
Harvested in the region of Tamatave, these small black and wrinkled grains are extremely aromatic with warm and gourmet notes of brioche, pine nuts and marshmallow. Some fresh notes too, of acid green fruit. Rich in essences and very resinous, it is a marvelous pepper, a great success.
It is a sublime pepper that you will grind or crush at the last moment, just before using it, in the usual register of peppers of this color.
Usage tips
With red meats, fatty fish such as mackerel, sardines, anchovies, tuna, eel. With brown sauces and tomato sauces, with pizza, vegetables: chard, red cabbage, lentils, chickpeas. For your marinades and charcuterie, with white cheeses and with fruit in salads, compotes, in syrup or jams: strawberries, cherries, figs, peaches, pineapple and chocolate desserts: cream, mousse, fondant, semi-cooked , etc.
