CORAL LENTIL DAHL AND INDIAN MIX
Dahl is an Indian dish made from dried legumes and spices. Discover this vegetarian dish to consume without moderation during your family meals.

INGREDIENTS
- 2 teaspoons ground ginger
- 2 onions
- 300g sweet potato
- 6 teaspoons of Indian mix
- 50 cl of coconut milk
- 140 g of tomato puree
- 150 g coral lentils
- Fresh coriander
- 2 limes
- 1 L of water with 2 teaspoons of Vadouvan mix
- 2 tablespoons of sunflower oil
PREPARATION STAGE
- Peel the sweet potatoes, cut them into small cubes and slice the onions.
- In a cast iron casserole, sauté the onion with the sunflower oil for a few minutes over medium heat. When the onions are pickled, add the tomato concentrate, the Indian mixture, the ground ginger and stir well.
- After a few minutes of cooking, add the coconut milk, the water with the Vadouvan mixture and bring to the boil, increasing the heat slightly.
- After boiling, add the sweet potatoes and lentils, salt and pepper then continue cooking over medium heat for 25 minutes, covered.
- Serve in a soup plate with chopped coriander and lemon.
SEASONINGS
Opt for a Tellicherry black pepper with plant and citrus aromas, slightly acidic.
Pink Himalayan salt will lend itself perfectly to this dish, with its sweet and delicate notes.
TIPS
If the Dahl reduces too much, you can dilute it with water.
You can replace the sweet potatoes with butternut, carrots or pumpkin depending on the season.
